1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsweetened Greek yogurt
½ cup granulated sugar
¼ cup honey or maple syrup
2 large eggs
¼ cup melted coconut oil (or butter)
1 teaspoon vanilla extract
1 cup fresh or frozen blueberries
1 tablespoon flour (for coating blueberries)
Directions:
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a separate large bowl, mix the Greek yogurt, sugar, honey, eggs, melted coconut oil, and vanilla extract until smooth.
Gradually add the dry into the wet , stirring until just combined. Do not overmix.
Toss the blueberries with 1 tablespoon of flour to prevent sinking, then gently fold them into the batter.
Pour the batter into the prepared loaf pan and spread evenly.
Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
