Creamy Lemon Chicken Ricotta Meatballs with Spinach & Garlic Orzo

Description

For the Pita Bites:
4 whole wheat pita breads, cut into small triangles
1 tbsp olive oil
1/2 tsp cinnamon (optional)
For the Ricotta Topping:
1 cup ricotta cheese
1/2 tsp vanilla extract
1 tbsp honey
1/4 tsp sea salt
For Garnish:
1/4 cup crushed pistachios
2 tbsp honey (for drizzling)
1/2 tsp orange zest (optional)
Directions:
Preheat oven to 375°F (190°C). Arrange pita triangles on a baking sheet and brush with olive oil. Lightly sprinkle with cinnamon if using. Bake for 8-10
minutes until crisp.
In a bowl, mix ricotta, vanilla extract, honey, and sea salt until smooth and creamy.
Spread a spoonful of ricotta mixture onto each toasted pita triangle.
Sprinkle with crushed pistachios and drizzle with additional honey.
Garnish with orange zest if desired. Serve immediately and enjoy!
