Orzo with Spinach and Feta

Description

For the Flatbread:
1 store-bought or homemade flatbread
1 tbsp olive oil
1/2 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/3 cup dried cherries
1/4 cup crumbled goat cheese
1/4 cup toasted walnuts, chopped
For the Balsamic Drizzle:
2 tbsp balsamic glaze
1 tsp honey
Garnishes:
1 tbsp fresh thyme leaves
1 tbsp fresh basil, chopped
1/4 tsp black pepper
Directions:
Preheat the Oven: Set the oven to 400°F (200°C). Place the flatbread on a baking sheet.
Assemble the Flatbread: Brush the flatbread with olive oil. Spread ricotta cheese evenly, then sprinkle shredded mozzarella. Distribute dried cherries,
crumbled goat cheese, and toasted walnuts over the top.
Bake: Transfer to the oven and bake for 12-15 minutes, or until the cheese is melted and bubbly.
Prepare the Balsamic Drizzle: In a small bowl, whisk together balsamic glaze and honey.
Finish & Serve: Remove the flatbread from the oven, drizzle with balsamic glaze, and garnish with fresh thyme, basil, and black pepper.
Slice and enjoy warm!
