2 cups cooked pasta (penne, rotini, or bowtie)
1 cup cherry tomatoes, halved
½ cucumber, diced
½ red onion, thinly sliced
½ cup kalamata olives, sliced
½ cup crumbled feta cheese
¼ cup fresh parsley, chopped
Dressing:
¼ cup olive oil
2 tbsp red wine vinegar
1 clove garlic, minced
1 tsp dried oregano
½ tsp salt
¼ tsp black pepper
Directions:
In a large mixing bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, oregano, salt, and black pepper.
Pour the dressing over the salad and toss to coat everything evenly.
Let the salad sit for 10 minutes to allow the flavors to meld together.
Serve chilled or at room temperature. Enjoy!
