One-Pan Chicken Cacciatore
Ingredients
4 bone-in, skin-on chicken thighs
1 tsp salt
1 tsp black pepper
2 tbsp olive oil
1 medium onion, sliced
1 red bell pepper, diced
1 yellow bell pepper, diced
3 garlic cloves, minced
1 cup mushrooms, sliced
1 can (14 oz) crushed tomatoes
1/2 cup chicken broth
1 tsp dried oregano
1/2 tsp dried thyme
1/4 tsp red pepper flakes (optional)
2 tbsp fresh parsley, chopped (for garnish)
Directions
Season chicken thighs with salt and pepper on both sides.
Sear in a large skillet with olive oil over medium heat until golden brown (about 5 minutes per side). Remove and set aside.
Sauté onions, bell peppers, mushrooms, and garlic in the same skillet until softened (about 5 minutes).
Add crushed tomatoes, chicken broth, oregano, thyme, and red pepper flakes. Stir well to combine.
Nestle chicken thighs back into the skillet, skin-side up. Cover and simmer on low heat for 25-30 minutes until the chicken is fully cooked and tender.
Garnish with fresh parsley before serving.
