1 lb large shrimp, peeled and deveined
1/2 cup cranberry sauce (homemade or store-bought)
2 tablespoons soy sauce
1 tablespoon honey
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon red pepper flakes (optional)
1 tablespoon fresh lime juice
1/4 teaspoon salt
1/4 teaspoon black pepper
Fresh parsley or green onions for garnish
Directions:
In a small bowl, whisk together cranberry sauce, soy sauce, honey, garlic, red pepper flakes, lime juice, salt, and black pepper until smooth.
Heat olive oil in a large skillet over medium heat. Add shrimp and cook for about 2 minutes per side, until they turn pink and slightly opaque.
Pour the cranberry glaze over the shrimp and toss to coat. Simmer for another 2-3 minutes until the glaze thickens and clings to the shrimp.
Remove from heat and garnish with fresh parsley or green onions.
Serve immediately over rice, quinoa, or a fresh salad.
