8 oz penne pasta
1 tablespoon olive oil
3 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon red pepper flakes (optional)
2 cups fresh spinach
1 ball burrata cheese
1 tablespoon fresh basil, chopped (for garnish)
1 teaspoon lemon zest (optional)
Directions:
Cook the penne pasta according to package instructions. Reserve ½ cup pasta water, then drain and set aside.
In a large skillet over medium heat, heat olive oil and sauté garlic for 1 minute until fragrant.
Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese, salt, black pepper, and red pepper flakes. Simmer for 2-3 minutes until slightly
thickened.
Add the fresh spinach and stir until wilted.
Toss in the cooked pasta, adding reserved pasta water as needed to create a creamy sauce.
Transfer to serving bowls and top with torn burrata cheese. Garnish with fresh basil and lemon zest, if desired.
Serve immediately and enjoy!
