2 cups fresh spinach

1/4 cup dried cranberries
1/4 cup crumbled feta cheese
1/4 cup chopped walnuts or pecans
1/4 small red onion, thinly sliced
Lemon Dressing:
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1 teaspoon honey or maple syrup
1/4 teaspoon salt
1/4 teaspoon black pepper
Directions:
In a large bowl, combine the spinach, chickpeas, dried cranberries, feta cheese, chopped nuts, and red onion.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey (or maple syrup), salt, and black pepper until well combined.
Drizzle the dressing over the salad and toss gently to coat.
