Description
1 cup orzo pasta
1 tbsp olive oil
2 garlic cloves, minced
2 cups fresh spinach, chopped
½ cup ricotta cheese
¼ cup grated Parmesan cheese
¼ cup fresh mint, chopped
1 tbsp lemon juice
½ tsp salt
¼ tsp black pepper
¼ tsp red pepper flakes (optional)
Directions:
Cook the Orzo: Bring a pot of salted water to a boil. Add orzo and cook until al dente. Drain and set aside.
Sauté the Spinach: Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds. Stir in chopped spinach and cook until wilted,
about 2 minutes.
Combine Reduce heat to low and add the cooked orzo, ricotta, Parmesan, lemon juice, salt, black pepper, and red pepper flakes. Stir until well combined and
heated through.
Finish and Serve: Remove from heat and fold in fresh mint. Serve warm and enjoy!
