1 lb fresh okra, trimmed and halved lengthwise
2 tbsp olive oil
3 cloves garlic, minced
½ tsp smoked paprika
½ tsp salt
¼ tsp black pepper
¼ tsp red pepper flakes (optional)
Directions:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, toss the okra with olive oil, minced garlic, smoked paprika, salt, black pepper, and red pepper flakes.
Spread the seasoned okra evenly on the baking sheet in a single layer.
Roast for 15-20 minutes, flipping halfway through, until the okra is golden and slightly crispy.
Remove from the oven and serve immediately. Enjoy!
