Garlic Parmesan Orzo with Roasted Veggies & Fresh Mint

Description

1 wheel of Camembert cheese (about 8 oz)
½ cup fresh or dried cranberries
2 tbsp honey
¼ tsp ground cinnamon
⅛ tsp ground nutmeg
¼ cup chopped walnuts
1 tsp fresh rosemary, chopped (optional)
Crackers or sliced baguette, for serving
Directions:
Preheat oven to 375°F (190°C). Line a small baking dish with parchment paper or place the Camembert in a small ovenproof dish.
If desired, score the top of the cheese in a crisscross pattern to help it melt evenly.
In a small saucepan over low heat, warm the honey, cinnamon, and nutmeg, stirring until combined.
Stir in the cranberries and let them soften slightly (if using dried) for about 2 minutes. Remove from heat.
Spoon the honey-cranberry mixture over the Camembert and top with chopped walnuts.
Bake for 12-15 minutes, or until the cheese is soft and gooey in the center.
Remove from the oven, sprinkle with fresh rosemary if using, and serve immediately with crackers or sliced baguette. Enjoy!
