3 ½ cups bread flour
1 cup active sourdough starter
1 ½ teaspoons salt
1 ¼ cups warm water
½ cup dried cranberries
Zest of 1 orange
1 tablespoon honey (optional for slight sweetness)
Directions:
In a large bowl, mix the flour, salt, and warm water. Add the sourdough starter and mix until a shaggy dough forms.
Let the dough rest for 30 minutes, then knead for 5 minutes until smooth.
Gently fold in the dried cranberries and orange zest. Cover and let rise at room temperature for 8-12 hours, or until doubled.
Turn the dough onto a floured surface, shape into a ball, and let it rest for 30 minutes.
Preheat oven to 450°F (230°C) and place a Dutch oven inside to heat.
Carefully transfer the dough to the hot Dutch oven, cover, and bake for 30 minutes.
Remove the lid and bake for another 10-15 minutes until golden brown.
Let cool before slicing. Enjoy with butter or honey!
