For the Salad:
12 oz farfalle (bowtie) pasta
1 cup cherry tomatoes, halved
2 cups baby spinach, chopped
1/4 cup red onion, thinly sliced
1/3 cup toasted almonds, sliced
1/2 cup grated Parmesan cheese
For the Lemon Herb Dressing:
1/4 cup olive oil
2 tbsp fresh lemon juice
1 tsp lemon zest
1 garlic clove, minced
1/2 tsp Dijon mustard
1/2 tsp salt
1/4 tsp black pepper
Directions:
Cook the farfalle pasta according to package instructions. Drain and rinse under cold water to cool.
In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, Dijon mustard, salt, and black pepper.
In a large mixing bowl, combine cooked pasta, cherry tomatoes, spinach, red onion, toasted almonds, and Parmesan cheese.
Drizzle the lemon herb dressing over the salad and toss to combine.
