Split Pea Soup

Ingredients

1 lb (450g) dried split peas, rinsed and sorted
1 ham bone or 2 cups diced ham
2 carrots, diced
2 celery stalks, diced
1 medium onion, diced
2 cloves garlic, minced
1 potato, peeled and diced
6 cups chicken or vegetable broth
1-2 cups water (as needed for consistency)
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste
Fresh dill (optional, for garnish)
Instructions

Prep Ingredients:

Rinse the split peas thoroughly and set aside.
Cook the Base:

In a large pot, combine split peas, ham bone (or diced ham), carrots, celery, onion, garlic, potato, chicken broth, thyme, and bay leaf.
Simmer:

Bring the mixture to a boil, then reduce the heat to low and simmer, uncovered, for 1-2 hours, stirring occasionally. Add water as needed to maintain your desired consistency.
Remove Ham Bone:

If using a ham bone, remove it after cooking. Shred any meat from the bone and stir it back into the soup.
Season:

Taste and adjust seasoning with salt and pepper.
Serve:

Ladle the soup into bowls and garnish with fresh dill if desired. Serve with crusty bread.
