Caramel Apple Bundt Cake with Pecans
Ingredients
For the Cake:
2 1/2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp salt
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar
4 large eggs
1 tsp vanilla extract
1/2 cup milk
2 cups peeled and diced apples (Granny Smith or Honeycrisp)
For the Caramel Drizzle:
1/2 cup caramel sauce (store-bought or homemade)
1/4 cup chopped pecans
Directions
Preheat and prepare: Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan.
Mix the dry ingredients: In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
Cream the butter and sugar: In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy. Add eggs one at a time, then mix in vanilla extract.
Combine wet and dry: Gradually add the dry ingredients to the wet mixture, alternating with milk. Mix until just combined. Fold in the diced apples.
Bake: Pour the batter into the prepared Bundt pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
Add caramel and pecans: Once the cake has cooled, drizzle with caramel sauce and sprinkle with chopped pecans.
