Hearty Beef and Barley Soup
Ingredients
1 lb beef stew meat, cubed
2 tbsp olive oil
1 medium onion, diced
3 carrots, sliced
3 celery stalks, sliced
3 garlic cloves, minced
6 cups beef broth
1 cup pearl barley
2 tbsp tomato paste
1 tsp dried thyme
1 tsp dried rosemary
Salt and black pepper, to taste
Directions
Sear the Beef:
In a large pot, heat olive oil over medium-high heat. Sear the beef cubes until browned on all sides, then remove and set aside.
Sauté the Veggies:
In the same pot, add the onion, carrots, and celery. Cook for 5 minutes until softened. Add garlic and cook for another minute.
Combine Ingredients:
Stir in tomato paste, then add the seared beef, beef broth, barley, thyme, rosemary, salt, and pepper.
Simmer:
Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 45–50 minutes, stirring occasionally, until the barley is tender and the beef is cooked through.
Serve:
Taste and adjust seasoning if needed. Ladle into bowls and enjoy warm!
