Avocado Chicken Salad
Ingredients
2 cups cooked chicken breast, diced or shredded
2 ripe avocados, diced
1 cup cherry tomatoes, diced
1/4 cup red onion, finely chopped
1 jalapeño, finely diced (optional, for spice)
2 tbsp fresh cilantro, chopped
1 tbsp olive oil
1 tbsp lime juice
Salt and pepper to taste
Directions
Prepare the dressing: In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
Combine ingredients: In a large bowl, gently mix diced chicken, avocados, cherry tomatoes, red onion, jalapeño, and cilantro.
