Honey Garlic Chicken Skewers

Ingredients

1.5 lbs chicken breast, cut into cubes
2 bell peppers (red and yellow), cut into chunks
1 large onion, cut into chunks
1/3 cup soy sauce
1/4 cup honey
2 tbsp olive oil
4 cloves garlic, minced
1 tbsp lemon juice
1/2 tsp black pepper
Skewers (wooden or metal)
Directions

Marinate the chicken:
In a bowl, whisk together soy sauce, honey, olive oil, garlic, lemon juice, and black pepper. Add chicken cubes and marinate for at least 30 minutes (or up to 2 hours for more flavor).

Assemble the skewers:
Thread the marinated chicken, bell peppers, and onion onto skewers, alternating as you go.

Cook:
Preheat a grill or grill pan to medium heat. Grill the skewers for 10-12 minutes, turning frequently and basting with leftover marinade, until the chicken is cooked through and slightly charred.

Serve:
Garnish with fresh parsley or sesame seeds if desired. Serve hot with rice, salad, or your favorite side dish.
