Creamy Sausage and White Bean Soup
Ingredients
1 lb Italian sausage (mild or spicy)
1 tbsp olive oil
1 small onion, diced
2 carrots, diced
3 garlic cloves, minced
4 cups chicken broth
1 can (15 oz) white beans, drained and rinsed
2 cups fresh spinach
1/2 cup heavy cream
1 tsp dried thyme (or fresh sprigs for garnish)
Salt and pepper to taste
Crusty bread for serving (optional)
Directions
Cook the Sausage: In a large pot, heat olive oil over medium heat. Brown the sausage, breaking it into bite-sized pieces. Remove and set aside.
Sauté the Veggies: In the same pot, add onion, carrots, and garlic. Sauté until softened, about 5 minutes.
Simmer the Soup: Pour in chicken broth and stir in white beans, thyme, salt, and pepper. Let it simmer for 10 minutes.
Add Creaminess: Lower the heat, stir in heavy cream, and return the sausage to the pot. Simmer for 5 more minutes.
Finish with Spinach: Toss in fresh spinach and let it wilt before serving. Garnish with fresh thyme for extra flavor.
