Pancake Breakfast Sandwiches
Ingredients
2 cups pancake mix (plus ingredients listed on the box: water/milk, eggs, oil)
8 slices cooked bacon
4 sausage patties, cooked
4 large eggs, scrambled
4 slices cheddar cheese
Maple syrup, for drizzling
Directions
Make the Pancakes:
Prepare the pancake batter according to the package instructions. Heat a non-stick skillet or griddle over medium heat and pour 1/4 cup batter for each pancake.
Cook until bubbles form on the surface, then flip and cook until golden. Make 8 pancakes total.
Cook the Eggs:
Scramble the eggs in a pan with a pinch of salt and pepper until fluffy.
Assemble the Sandwiches:
Start with one pancake as the base. Layer on a sausage patty, scrambled eggs, a slice of cheddar cheese, and two strips of crispy bacon. Top with another pancake.
Finish with Syrup:
Drizzle with warm maple syrup for that sweet and savory perfection.
