Roasted Garlic Cauliflower and Mushrooms

Ingredients

1 head cauliflower, cut into small florets
8 oz mushrooms, sliced (button or cremini work best)
3 cloves garlic, minced
3 tbsp olive oil
1 tsp dried thyme (or fresh)
Salt & black pepper, to taste
2 tbsp fresh parsley, chopped (for garnish)
Instructions

Preheat the Oven:

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
Prepare the Vegetables:

In a large bowl, toss the cauliflower florets and mushrooms with olive oil, minced garlic, thyme, salt, and pepper.
Roast the Veggies:

Spread the vegetables evenly onto the baking sheet. Roast for 25-30 minutes, stirring halfway through, until golden and tender.
Garnish & Serve:

Sprinkle with fresh parsley before serving for a pop of color and flavor.
