Cheesy Bruschetta Chicken Bake
Ingredients
2 cups cooked chicken (cubed or shredded)
1 cup diced tomatoes (fresh or canned)
1 cup shredded mozzarella cheese
1/2 cup Parmesan cheese (grated)
2 cups seasoned stuffing mix
1/4 cup fresh basil (chopped)
1/4 cup olive oil
2 cloves garlic (minced)
1/2 tsp Italian seasoning
Salt and pepper to taste
Directions
Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Layer the Chicken: Spread the cooked chicken evenly in the baking dish. Season with salt, pepper, and Italian seasoning.
Prepare the Topping: In a bowl, combine diced tomatoes, minced garlic, fresh basil, olive oil, and stuffing mix. Stir until well mixed.
Assemble the Bake: Sprinkle half of the mozzarella and Parmesan over the chicken. Top with the stuffing-tomato mixture. Finish with the remaining cheese.
Bake: Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
Serve: Let cool for a few minutes and serve warm with a side of salad or pasta.
