Baked Italian Chicken Dinner
Ingredients
1 lb boneless, skinless chicken breasts, cubed
2 cups broccoli florets
2 medium potatoes, peeled and diced
1 small onion, chopped
3 tbsp olive oil
1 tsp Italian seasoning
1/2 tsp garlic powder
1/4 tsp red pepper flakes (optional)
Salt and pepper to taste
1/4 cup grated Parmesan cheese (optional, for garnish)
Directions
Preheat oven to 400°F (200°C) and grease a large baking dish.
Prepare ingredients: In a large bowl, toss chicken, broccoli, potatoes, and onion with olive oil, Italian seasoning, garlic powder, red pepper flakes (if using), salt, and pepper.
Arrange in baking dish: Spread the mixture evenly in the prepared baking dish.
Bake: Cook for 25–30 minutes, stirring halfway through, until the chicken is cooked through (internal temperature 165°F) and the vegetables are tender.
Garnish and serve: Sprinkle with Parmesan cheese if desired and serve hot!
