Sautéed Mushrooms and Cauliflower

Ingredients

1 medium head of cauliflower, cut into small florets
2 cups mushrooms (cremini or button), sliced
2 tbsp olive oil or butter
3 garlic cloves, minced
1/2 tsp smoked paprika
1/2 tsp dried thyme
Salt and black pepper to taste
2 tbsp fresh parsley, chopped (for garnish)
Directions

Cook the cauliflower:
Heat 1 tablespoon of olive oil or butter in a large skillet over medium heat. Add cauliflower florets and cook for 6-8 minutes, stirring occasionally, until golden and slightly tender. Remove from the skillet and set aside.

Sauté the mushrooms:
Add the remaining tablespoon of olive oil or butter to the skillet. Add mushrooms and cook for 5-7 minutes, stirring occasionally, until browned and their moisture has evaporated.

Add garlic and spices:
Stir in minced garlic, smoked paprika, thyme, salt, and pepper. Cook for 1-2 minutes until fragrant.

Combine and finish:
Return the cauliflower to the skillet. Toss everything together and cook for an additional 2-3 minutes to heat through.

Serve:
Transfer to a serving dish, garnish with fresh parsley, and enjoy as a side dish or light main course.
