Citrus Pomegranate Glazed Salmon
Ingredients
1 lb salmon fillet
2 tbsp olive oil
Salt and pepper to taste
1/3 cup fresh orange juice
2 tbsp honey
1 tbsp soy sauce
1 tsp Dijon mustard
1/2 cup pineapple chunks
1/2 cup pomegranate arils
1/2 cup kiwi slices
1/4 cup fresh parsley, chopped
Directions
Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or foil.
Prepare the Salmon:
Place the salmon on the prepared baking sheet. Drizzle with olive oil, then season with salt and pepper.
Make the Glaze:
In a small bowl, whisk together orange juice, honey, soy sauce, and Dijon mustard.
Bake the Salmon:
Brush the glaze generously over the salmon. Bake for 15-18 minutes, or until the salmon is flaky and cooked through.
Add the Toppings:
Top the baked salmon with pineapple chunks, pomegranate arils, and kiwi slices. Garnish with fresh parsley.
