Cozy Shepherd’s Pie Soup
Ingredients
1 lb ground beef or lamb
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
2 cups beef broth
1 cup frozen peas
1 cup frozen corn
2 medium carrots, diced
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 tsp dried thyme
Salt & pepper to taste
Mashed Potato Topping:
3 large potatoes, peeled and cubed
2 tbsp butter
¼ cup milk
Salt & pepper to taste
Optional: parsley for garnish
Instructions
Boil potatoes in salted water until tender. Drain, mash with butter and milk, season with salt & pepper. Set aside.
In a large pot, heat olive oil and cook onion and garlic until soft.
Add ground beef and cook until browned. Drain any excess fat.
Stir in tomato paste, Worcestershire sauce, thyme, salt, and pepper.
Pour in beef broth and bring to a simmer.
Add carrots, peas, and corn. Simmer for 15 minutes or until vegetables are tender.
Spoon mashed potatoes on top of the soup in bowls. Optional: broil for a crispy potato topping!
Garnish with parsley and serve hot!
