Greek Chicken Souvlaki with Tzatziki

Ingredients

For the Chicken Souvlaki:

1 1/2 lbs chicken breast, cut into cubes
3 tbsp olive oil
2 tbsp lemon juice
3 garlic cloves, minced
1 tsp dried oregano
1 tsp dried thyme
Salt and pepper to taste
For the Tzatziki Sauce:

1 cup Greek yogurt
1/2 cucumber, grated and squeezed to remove excess water
1 garlic clove, minced
1 tbsp olive oil
1 tbsp fresh dill or mint, chopped
1 tbsp lemon juice
Salt and pepper to taste
For Serving:

Pita bread
Fresh Greek salad (cucumber, tomato, red onion, parsley)
Lemon wedges
Directions

Marinate the Chicken: In a bowl, whisk olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add chicken cubes, toss to coat, and refrigerate for 30 minutes to 2 hours.

Make the Tzatziki Sauce: Combine Greek yogurt, grated cucumber, garlic, olive oil, dill or mint, lemon juice, salt, and pepper in a bowl. Mix well and refrigerate until ready to serve.

Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Thread marinated chicken onto skewers and grill for 4-5 minutes per side, until golden and cooked through.

Serve: Serve chicken souvlaki with warm pita bread, tzatziki, Greek salad, and a squeeze of fresh lemon juice.
