Whipped Ricotta with Roasted Cherry Tomatoes
Ingredients
1 cup whole-milk ricotta cheese
1/4 cup cream cheese, softened
1 tbsp olive oil (plus more for drizzling)
1 pint cherry tomatoes, halved
2 garlic cloves, minced
1 tsp balsamic vinegar
1/2 tsp salt
1/4 tsp black pepper
Fresh basil, chopped (for garnish)
Toasted baguette slices or crackers for serving
Directions
Preheat Oven: Preheat your oven to 400°F (200°C).
Roast Tomatoes: Place cherry tomatoes on a baking sheet. Toss with olive oil, garlic, balsamic vinegar, salt, and pepper. Roast for 15-20 minutes until softened and slightly caramelized.
Whip Ricotta: In a food processor or blender, combine ricotta, cream cheese, and 1 tbsp olive oil. Blend until smooth and creamy.
Assemble: Spread the whipped ricotta onto a serving dish. Top with the roasted cherry tomatoes.
Garnish & Serve: Drizzle with olive oil, sprinkle with fresh basil, and serve with toasted baguette slices or crackers.
