1 lb boneless skinless chicken breast, diced
2 tbsp lemon juice
2 tbsp olive oil
1 tbsp chopped fresh parsley
1 tsp smoked paprika
½ tsp cumin, ½ tsp onion powder, ½ tsp garlic powder
¼ tsp turmeric, ⅛ tsp cayenne pepper
1 cup uncooked long-grain white rice
1 medium zucchini, grated
2 cups chicken broth

Directions:
1. Toss chicken with lemon juice, olive oil, herbs, and spices in a baking dish. Marinate for 30 mins.
