1 ½ lbs fresh green beans, trimmed
1 tsp Diamond Crystal kosher salt, plus more as needed
¼ tsp fresh black pepper
8 oz cremini mushrooms, thickly sliced
1 small red onion, thinly sliced
1 ½ tbsp unsalted butter
¾ cup low-sodium chicken stock, plus more as needed

Directions:
1. Spread green beans in a skillet, add salt and pepper, toss to coat.
2. Scatter mushrooms, onion, and butter; pour in chicken stock.
3. Cook over medium-high heat, stirring occasionally, until beans are crisp and mushrooms are saucy, about 20 minutes.
