5-Minute Thai Peanut Crunch Slaw

Description

For the Salad:
1 cup quinoa, rinsed and cooked
1/2 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, thinly sliced
1/4 cup kalamata olives, sliced
1/3 cup crumbled feta cheese
1/4 cup fresh parsley, chopped
For the Honey-Lemon Dressing:
3 tbsp olive oil
2 tbsp fresh lemon juice
1 tsp honey
1 tsp Dijon mustard
1/2 tsp garlic powder
1/4 tsp dried oregano
Salt and black pepper to taste
Directions:
Cook quinoa according to package instructions, then fluff with a fork and let cool.
In a large bowl, combine quinoa, cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, garlic powder, oregano, salt, and black pepper.
Drizzle the dressing over the salad and toss until well combined.
Let the salad sit for 10 minutes to allow flavors to meld.
Serve chilled or at room temperature. Enjoy!
